The Vegetarians Dream Potato, Leek, Asparagus & Tofu Soup

So as a vegetarian, I have a tough time getting my iron and protein in witout eating 16 cans of beans a day. So when I find a recipe that can help me out with this, Im ecstatic. This recipe I just kind of made up as I went along and it turned out ammazing.

Start with your soup pot, add 2 tsp. of olive oil and let heat up
Add 2 finely chopped garlic cloves and 1/2 fine chopped white onion
Stir on medium heat until... I have no idea... just until it looks done lol

I then dissolved 6 tbsp. of vegetable stock powder (I love Knorr) in 6 cups of water and added to the pot

Add 3 chopped up leeks, 10 stalks of asparagus, and 5 cubed potatoes and come to a rolling boil until potatoes are soft.

Once all soft and cooked, I cut a 1/2 cube of firm tofu into small cubes and added into soup mix and let simmer for a few mins for tofu to absorb broth. I also added 3 cups of water here because I lost a lot of liquid because of the steam. Ill use a lid next time.

After I let the tofu chill for a bit I used my handheld blender (best $80 Ive ever spent) to blend it all up. If you like your soup chunky, strain out some veggies before you blend. I blended mine up pretty good so it is very smooth.

Salt & Pepper to your liking and wa-laa!

Tons of veggies!
1/2 onion
2 garlic cloves
3 leeks
5 potatoes
1/2 bunch of asparagus and 10 cups of water! Not too shabby! Enjoy....

  1. Hey Lacey! This sounds delicious! I'm not a vegetarian, but I don't eat red meat, just chicken and fish. I want to give this recipe a try!
